Green Onion Tofu Spread
If you are looking for a spread with which to top your toasts, your savoury waffles, and even to add to your lasagnas, look no further. Made with only 7 ingredients, this Green Onion Tofu Spread is exactly what you are looking for; it is deliciously creamy, tangy, cheesy and made with wholesome ingredients!
I got the idea to make this tofu spread when I was brainstorming about potential toppings for savoury waffles (which by the way are also on my blog – CLICK HERE for the recipe). I wanted to top my waffles with something that was quick and easy to make but that added a lovely brightness and creaminess to a crispy and dense waffle. After doing some research online, I settled on making this tofu spread (which I think could also call tofu ricotta).
I had never made or even tried any kind of tofu spread or tofu ricotta in the past, but I was up for the challenge. I mean it cannot be thaaat hard to make a tofu spread!
I was completely right! Honestly, I was surprised by how easy a spread like this one can be put together and how delicious it tasted. It probably took me 10 minutes from chopping the green onions and measuring the ingredients to transferring it into a jar and putting it away in the fridge!
PLUS: This spread can be used in soooo many ways!
Spread it on toast & enjoy just as is
Spread it on toast and top it with sliced avocado and a pinch of salt and pepper
Enjoy it in a burger as a creamy element
Use it as a ravioli filling
Use it in place of ricotta in a lasagna
Use it as a topping on savoury waffles
Replace your cheese with it on a homemade pizza
Enjoy it as a dip with crackers or croutons
Stuff it in pasta shells and bake with tomato sauce
I think this tofu spread will become a staple in my fridge. It is so versatile that simply by pairing it with different ingredients, you can completely change your gustative experience every time you have it. You guys should definitely give this a try – especially if you are still doubting the incredible power of tofu ;)

Green Onion Tofu Spread

yield: about 6 servings
1 350g block firm tofu, drained and broken into medium-sized pieces
1 tbsp + 1 tsp nutritional yeast
1 tbsp lemon juice
1/4 tsp lemon zest
3/4 tsp salt
1 tsp onion powder
1/3 cup sliced green onions + 2 green onions, sliced
Add tofu, nutritional yeast, lemon juice, lemon zest, salt, onion powder and 1/3 cup green onions to a food processor.
Process until creamy. Add the remaining 2 green onions and pulse a few times to incorporate.
Taste and adjust seasonings to your liking.
Transfer to an airtight container and keep in the fridge for up to a week
